Fish cooking recipes vary tremendously in their variety and complexity. One of the tastiest is fish cakes; homemade ones are worlds apart from the ready made ones you can buy in the supermarket or from the local chip shop. To make eight fish cakes in order to serve four people as a starter you will need half a kilo of fish. You can use cod or haddock if you ensure that it comes from a sustainable source, or to save money you can try Pollack, this is a very good fish and very similar to cod and haddock and it will be far cheaper. Cook the fish in 150ml of milk with a couple of bay leaves for about ten minutes. When it is ready discard the bay leaves and flake the fish into a bowl, making sure that you remove any bones that you come across. Add into this 350g of mashed potato, some lemon zest, chopped chives and parsley; bind it all together with an egg and shape into rounds and fry.
For a more substantial meal you can make a fish pie. For fish cooking recipes such as this you will need more than one type of fish, to serve four people buy four fillets of cod and one fillet of smoked haddock, the smoked fish gives the pie its flavour. Poach the fillets in milk with a roughly diced onion, carrot and stick of celery along with a bay leaf and a few peppercorns. After about fifteen minutes when the fish is cooked, put everything into a sieve and put the milk into a jug. Discard the vegetables and flake the fish with your fingertips so you can feel for any bones and remove them as you go. Put a knob of butter into a saucepan and allow it to melt then add a tablespoon of flour and stir it to make a roux. Let this bubble away for a minute or so to cook off the flour. Then gradually add the milk and it will thicken after a few minutes. You can then add the fish along with a handful of prawns if you wish. Put this mixture into a well buttered oven dish and top with mashed potato and put it into the oven for about half an hour to forty five minutes.
Fish cooking recipes do not necessarily need to be so involved or complex; you can simply grill the fish and serve it with a wedge of lemon and a salad. One of the tastiest foods to barbeque is fish, wrap a mackerel up in some foil with a drizzle of oil, salt, pepper and a squeeze of lemon and put it onto the grill of the barbeque, cooking it this way gives you the flavour from the coals and it can be surprising how something so simple as this can be so tasty. While barbequing also try putting some king prawns on a skewer and putting this directly onto the grill of the barbeque, you do not need to add anything to these as they will be delicious on their own.
